Zucchini "Tabouli" Salad



This is a wonderful, quick lunch salad, loaded with the nutrients and enzymes present in fresh, raw foods.  I've made it with cauliflower, which works equally well.  Adjust quantities to taste.

In your food processor, chop finely:

  • 2 small or 1 medium zucchini
  • handful fresh parsley
In a bowl, blend zucchini mixture with:
  • 1/3 c. diced cucumber
  • 1 small tomato, diced
  • 1 green onion or 1 T. red onion, cut small
  • granulated garlic to taste or small clove garlic, finely minced
  • 2-3 T. extra virgin olive oil
  • 2 T. fresh lemon juice
  • salt to taste
You can eat immediately or chill for an hour.  Serve with whole grain bread and a good cheese.


Jellied Vegetable Salad (a.k.a. Perfection Salad)


This is a really old salad recipe, going back I suppose to the time powdered gelatin and refrigerators came into being.  I found a version in a 1942 cookbook, with variations in two other cookbooks I have, both of which are called "Perfection Salad."

I was delighted to discover that it has all ingredients I can have on the candida diet, with the exception of sugar, which I substituted stevia for.  A very refreshing change on a limited diet, and a new taste for summer.  I might add that this would be a good way to get some extra veggies in your kids' diets!

  • 2 packets powdered gelatin
  • 1/2 c. cold water
  • 1/4 c. cider vinegar*
  • 2 T. fresh  lemon juice
  • 2 c. boiling water
  • 2 tsp. stevia or to taste (original recipe:  1/2 c. sugar)
  • 1 tsp. salt
  • 1 c. finely shredded cabbage
  • 2 c. finely sliced celery
  • 1/4 c. chopped green pepper
  • 1/2 c. thinly sliced radishes
  • (Optional:  1/4 c. cooked green peas, 1/2 finely chopped cucumber)
In a medium bowl, soak gelatin in cold water for 5 minutes to soften.  Add the vinegar, lemon juice, salt, stevia, and boiling water, stirring well.  Chill in the refrigerator until slightly thickened, then stir in all the vegetables.  Pour into an 8x8 pan or 2-quart mold and chill until firm.  Cut into squares and serve on lettuce leaves with *mayonnaise spread on top.  Serves 6 to 8.

* Organic apple cider vinegar, raw and unfiltered (like Braggs), is permitted on a candida diet if you have no reactions to it.
**I make my own mayonnaise that has no vinegar or sugar.  Many cookbooks have recipes for this.

Beef-lovers salad

You can use either canned, cubed beef (I get mine at Costco) or leftover roast for this recipe.  Veggies are approximate amounts; just adjust to taste.  Serve on a bed of mixed greens or use as a wrap filling.  Really delicious!

In a bowl, blend:
  • 1 1/2 c. cubed cooked beef
  • 1/2 c. thinly sliced celery
  • 1/3 c. thinly sliced broccoli stalks, outer fibers cut off
  • 1/4 c. diced red onion
  • 1 hard-boiled egg, diced
  • 1/2 c. or so mayonnaise mixed with 1 T. prepared horseradish
  • salt and pepper to taste

Marinated summer salad

I threw this together the other night as an alternative for a regular tossed salad--and we all liked it!   Very colorful and appealing, as well as delicious.  Thought I'd pass it along.

Use the amounts of each vegetable you want, and vary the seasoning according to taste.

Toss together in a bowl:
  • sliced, diced raw zucchini (could also add yellow summer squash)
  • diced mixed peppers:  green, red, orange, yellow
  • thinly sliced red onion
  • sliced hearts of palm
  • minced fresh garlic
Mix and pour this marinade over veggies:
  • 1/3 c. apple cider vinegar (I like Braggs)
  • 1/3 c. olive oil
  • 1/2 tsp. to 1 tsp. mixed Italian herbs
  • sea salt, a shake of pepper
Blend and chill well before serving.

Homemade Ranch dressing

This quick and yummy dressing can be used as a salad dressing, dip, or sandwich spread.  Tastes amazingly like the commercial variety but without the chemicals and additives.

In a bowl, blend with a whisk:
  • 1/2 c. mayonnaise
  • 1/2 c. plain yogurt, buttermilk, OR kefir
  • 1 T. dried parsley flakes
  • 1 tsp. each garlic powder & onion powder
  • 1/2 - 1 tsp. salt
Adjust seasonings to taste.  Chill and enjoy!

Stevia Coleslaw and variation

Sounds like a still life, huh?

This recipe can be modified easily, depending on your taste.

Stir together until well mixed:
  • 2 c. chopped cabbage (green or green/red combo)
  • 1/2 finely cut bell pepper
  • 1 grated carrot
  • (optional:  some finely sliced green onion)
Stir together and add to veggies:
  • 1/2 c. (or more according to taste) plain yogurt (whole is best; you can also use part mayonaise)
  • 1 T. fresh lemon juice
  • one packet of Stevia or 1/4 tsp. (or to taste)
Chill and serve.  Very refreshing!

Variation:  Omit green pepper and onion.  Instead, add 1 chopped red delicious apple, 1 can mandarin oranges or one seeded orange cut into bite-sized pieces, 1 can or equivalent fresh pineapple chunks.  Not sugar-free because of the fruit but delicious!
